SB Build for tri-monitor trading, minimal gaming!

Looking to build a new rig for trading and some gaming. Please read the entire post if you would like to make suggestions, thank you!

Requirements:
1. Can run 3 monitors, doesn't need to be eyefinity/3d surround.
2. Runs some games, mainly WoW. Not looking to max the latest and greatest.
3. Quiet computing, cooling will almost certainly be stock.
4. No real budget but not looking to overspend for stuff we clearly don't need (1KW PSU, SLI 580, WC loops, etc)

I have asked around and the general consensus seems to be the same, that a decent quad with lots of ram and a fast hard disk are all things to aim for.
I have drawn up a preliminary build and I just wanted some external feedback:

CPU - i5 2500
Motherboard - AsRock H67M
Ram - G.Skill 4GB DDR3-1333 CL9 x 2
Hard Drive - Western Digital Caviar Black 1TB SATA3
GPU - Gigabyte 6850
Optical - Any generic dvd burner
PSU - Seasonic M12 520W
Case - Lian-li PC K62
OS - Win 7 Pro

Some notes:
1. I have considered dropping the 2500 down to something like the 2400 or even 2300, but I didn't think the $20 savings is worth the performance loss. Is this completely off base?
2. Would the 6850 be sufficient? We're not looking for top of the line gaming heaven, just need it to play WoW on one screen and run the other two for graphs and what not.
3. Any other places I can cut? Could we squeeze an SSD in assuming a budget of ~800?

Absolutely squeeze in an SSD if you can. Time is money, and since you're trading it'd definitely be worth the investment. I haven't been keeping up with the latest SSD tech though so someone else should come by and recommend you one.

I honestly can't recommend a WD Caviar Black. I've had a few issues with mine, and they're pretty loud as far as hard drives go. The 6850 should be more than enough. Also might as well get 1600+ RAM since it won't cost much more.
