Yeah you sleeve individual wires but the wires dont go into the same pin. If one end of a wire is on pin 13 on one connector, it will be on pin 22 on the other end. Im not saying those are the right pin numbers, im just giving an example.

I'm not sure what you're talking about? As long as you put the correct wires back where they were in the connector they can be as straight as a board.

Right?

Right?
On extensions like this, yes.

Coming right off the PSU for example, maybe harder to do. I guess if its a modular PSU then it could/would be possible. if it's not modular, maybe harder to achieve.

The wires cannot just go to any random spot on the connector, which is why they are typically color coded to show what that wire is carrying. That said, a ground wire can go to any pin that's supposed to be ground; similarly, a 5v wire can go to any 5V pin. What will cause problems is if you wire 12V to a pin that's supposed to be 5V etc.

I've never had an issue with wire wrapping or twisting on itself. I've sleeved 4 PSU's and multitudes of fan, I/O, USB and other cables. Just take your time. Sleeve one wire at a time.
