On a side note I seem to notice some pop-in and texture loads that I don't remember... Could this have something to do with the fact that I switched from SSD to HDD or is that unrelated?
The physical drive the game is stored on doesn't actively draw textures in the game.
That would be attributed most likely to the options "LOD Distance", which determines to what degree textures are rendered relative to their distance from the camera, and "Texture Memory Size", where if you have it set to the highest setting you may be slowing the rate at which your VRAM can render the environment, so try dropping it back to large or medium, or lower still. Experiment with these and you may see less pop-in.
