Antec EarthWatts 750W is a great PSU, fairly inexpensive and is enough power to run dual GTX580s with all your overclocks, etc.

Oh and for cooling options, what should I go with? I was looking at the TR Frio and the Nuctuha(sp?) for air.... what about going with a simple water cooling route? I was looking at the Corsair H50/60/70. What do you guys think about this? Let me know, thanks for all your help already!

By the way if you havent found a PSU yet, get the Seasonic X750 for single 580 or the X850 if you want to SLI in the future. I love this PSU so much.

This has probably been mentioned.. But i would get 8GB of 16.. If you get 16 now it will be slower than the rest when 16GB is the norm..

I would get the 2500k instead of the 2600k if your main purpose is gaming..
The Hyperthreading wont help unless you are F@H or doing Video or 3D rendering.

750W is more than enough for GTX580 SLI, including all overclocks, etc.
If it's a single GTX580, 500W is enough. You could go 850W if you really believe that somehow you'll manage to use the extra 100W...
