I have Windows 7 64-Bit and 4GB RAM and I have multiple applications open and loads of chrome windows and run games at maxed settings minimized and it still doesn't pass 3.5GB RAM.

You should be fine.
That's fine. You weren't running 4-channel though. You were still only running dual channel, as the slots are split up in pairs.

Typically you can overclock your memory and CPU higher with only 2 slots filled because there is less strain on the memory controller. I wouldn't see there being a big benefit to only running 2 out of 4 sticks running stock, though (barring any timing/frequency changes). I believe there is decreased latency with only 2 sticks, but don't quote me on that.

The extra memory would help in certain situations, such as multi-tasking while running intensive programs/games, RAM disk, virtual machines, etc.

4GB is perfectly fine for most people, even with video/audio conversions I rarely pass 4GB, in fact I would go as far to say if I was rebuilding my system I would get just 4GB.

Everyone's system is going to be different depending on how long they have been running on a particular install, OS used, amount of RAM installed, and programs installed.

Your system looks fine. Caching RAM that isn't being used is a good thing, as it takes a lot less time to grab data from RAM when needed than it does from a HDD. When you start loading the RAM heavily the cache will clear to free up resources as necessary.

Just went to 8gb last night from 4gb - I mainly use my PC for gaming these days seeing zero increase in performance in games with the upgrade. 4gb should be enough for most mortals for the near future.

4GB is plenty for the average computer user. I had 6GB for a long time (quirk of triple channel) and was fine with it. Only my recent server hosting required me to upgrade that.
