gtx 580 is available for $490+ u dont need 600$ for it....
and ya its better than gtx 570....
as u said ur self...u r noob(new to stuff)....so u should take the most powerfull single card in the market....
or if u can spend 100-150$ above ur 600$ budget then taking 2x gtx 570 or 2x hd6970 makes sense.....

But I doubt you will manage to watercool 580s while staying under 3000$ without sacrificing on the rest. Your best bet are crossfired 6970s if you really wan't that but a single GTX 580 or 6970 would probably be more than enough especially with a single monitor.
