Well I recommended getting two F3s because RAID 0 would give great performance with a lot of space. They are pretty cheap at around $50-$60 each for the fastest 1tb 7200RPM you can buy. I'm not too up to date with the SSDs so I can't comment on which. I know getting a smaller one ~64gb would work great as a boot drive and paired up with F3s in RAID 0 you will get pure performance.

I went through your whole list and went...

case - NICE
motherboard - GOOD CHOICE
gcard - YES
cpu - GREAT
ram - FANTASTIC
powersupply - kick ass... but comments:

You do NOT need that much power. A rig like yours will never need more than 750W.

I'm surprised to see this one out of stock at the moment but I'd get this one (if and when they restock):
http://www.newegg.com/Product/Produc...82E16817139006

Also these will do:
http://www.newegg.com/Product/Produc...82E16817139021

http://www.newegg.com/Product/Produc...82E16817139010

and here's probably one of the best 750W ones out there:
http://www.newegg.com/Product/Produc...82E16817151087

OH and speaking of SSDs, the 60GB ones just dipped under 100.
I even got one myself! ^.^

In my opinion, an SSD should be used solely as a system and programs drive.
The main benefits of having these as a primary disk is super fast start up time and extreme responsiveness of your system. I recommend it if you have the money, but its not at all a necessity.

I got the Agility 2 60GB one, but the Vertex 2 is a tad better in IOPS (random transfer speeds) for aprox same price.
And here's Agility 3 60GB if you like SATAIII

Dude 800D? Really? Get a HAF 932,942,922,912+,X those cases are beautiful
CPU-Could not have gotten a better cpu
MOBO-Niceee,But I prefer Asus-They have a sale on the beast sabertooth p67
GPU-Nice find you could do some sick gaming on that.
RAM-Pretty good but check if you can find a higher speed like 1800 mhz that would be great
PSU- It's a more than perfect psu to start with-you have lots of space to upgrade and test on so you're good to go.
WC-Get a xpsc rasa 750 or a H70 for water cooling as above posters said you do not need too much wattage for a wc.
HD-Get the F3 1TB. Great speed.Great Space.Great Price.(More like amazing.)
SSD-You should get a Crucial M4 256 GB SSD

Thats personal opinion, personally I find them hideous, from a technical stand point the 800D is one of the best for a WC set up. But the 922 and 912+ are just stupid suggestions, could you imagine a WC set up in that with two GPUs.

yes sorry. I think i want to go with the 800d instead of some case with big fans. I looked at a lot of peoples opinions and the 800d came out on top (for the most part for liquid cooling) I like the look of the 800d and i think i am going to mod the top fans to put fans on top and put some type of cover..

and ty for the wc suggestions

RAID 0 is a way to set up two identical hard drives. The two hard drives work together as one hard drive. Whenever information needs to be written to it half of the information is written on one and half on the other. That way you theoretically half the time needed to write the information since you have two heads writing the information at the same time.

What I was talking about with the SSDs is that you install your operating system on that SSD and maybe one or two programs you use daily. Your music, movies, videos and other storage would go on your other hard drives.
