Go with the HX750 modular and gold certified can't go wrong can't go wrong with the TX750 but I would prefer modular and better certified PSU in the long wrong.

Might look into Samsung F3 1TB instead cheaper and still performance very well. Caviar Black doesn't really use the SATA 3 port it can hardly use the SATA 2 port to it's full potential.

MSI GeForce 560 Ti twin frozer or MSI GeForce 570 twin frozer.
The 560 ti is the best performance/price point while the 570 is a upgrade but we are talking about a few frames ingame. Though if the money is there get the 570.
No doubt the EVGA will do good but MSI twin frozer is more silent and cooler.

Twin frozer 2 is a solid cooler.

Now would you recommend the 6950 or GTX 560 ti?

Also I'm thinking of going to change the i5 to an i7, if I did, will all my parts be compatible or would I have to change some things.

6950 is plenty for 1080p single screen. Don't go above that and save money for an ssd, you'd appreciate your rig more that way

I guess you're right! But wouldn't the GTS 560 TI be better? It is almost same price + it has Physx/Cuda/etc.
As for the SSD, what should be the use of that?

And I'm sticking with the 2500k

Also I might watercool in the near future! So I'm keeping with full tower

scrap that optical and just use USB sticks to load windows and transfer/keep data?

I personally love USB > Optical drive plus optical is ugly as ****.
If you have a laptop or just get a USB optical drive you can just pop it in there transfer data on a USB stick

Other than that looks superb
One thing look into Noctua NH-D14 it will treat you so much better than 212+ not saying that 212+ is bad. If theres money for the D14 go for it!

What you mean by optical? Your talking about the dvd burner?
I think I'm fine with the 212+

Also I just noticed something, I picked the AX and not HX PSU haha.
Well I just changed to the HX, also I couldn't find gold only silver?

Look for better deals before purchasing. I bought My 2500k at Microcenter yesterday for 40 dollars less than what it goes for on Newegg.
