IMO the extra price that the 3gb warrants isn't worth it. I don't foresee anything using more than 1.5gb at 1920x1080 resolution anytime soon. I think that a 580 could easily last you 2 years. A lot of people are still using GTX 280's and those have been out for over 2 years now.
Yeah, 3GB are silly money as well. So, what do you think, is a GTX 580 worth the extra say £100 over a GTX 570? I'm looking at these fellas:

http://www.scan.co.uk/products/1536m...4mhz-512-cores

http://www.scan.co.uk/products/1280m...shader-1540mhz

Also, are these the best cooling cards? I'm not too interested in overclocking GPU's, but manual fan control is a must.

I'm out of touch with computers, but want a new gpu. Im looking at a 3gb gtx580, but don't want to spend lots if the 6 series is around the corner...

Whats your current card? Just get 580, you wont be disappointed. Also it will eat console ports for breakfast, it will last long

What's your resolution?

If it's 1920x1200 or less, there's really no reason to get the 3gb version..

Currently on a Radeon 5850 1GB on a 1920x1080 screen. It struggles in BF3 alpha. Was looking at either a 3GB GTX 580 or a Superclocked 1.5GB GTX 580.

1.5gb should be enough, or you could just snag another 5850 for less and have better performance than a 580. If you can add another card in your setup that is.

Crossfire and SLI just sound like a pain in the posterior. I just want simplicity, so one card!

Is it not worth getting a 3GB card just in case some stupendous texture mod/game comes along in the future. I want this card to see my through for 2 years.

I've never had any issues with crossfire or SLI, but I understand wanting a single card solution.

AMD's next generation comes out at the end of this year.
NVIDIA is using a different fab and is having some issues with output, coming Q1 2012
