No problem running 2 580's OCed, 8gb of ram OCed, 2600k OCed, 7 fans, 3 HDDs, 1 SSD, and 2 optical drives on my Enermax Revolution 920w PSU. I've had 4 Enermax PSUs and they've all performed flawlessly.

Power consumption table

This gives you some idea what these cards are pulling for power.
2 GTX 580 under load will be pulling 700+ watts not including everything else.
I would not go with any less than a 1000w psu.
I'm currently running the Corsair HX 1000w and I can tell you it has plenty of juice.
