The SLI 560 will perform better then a 580 in games that support SLI and use it well. In games with bad optimization, the 580 will win.
Actually I know of one game that will, and that game is Protocol. I got up to 75% total CPU usage on my 8-thread CPU, which mean it's coded to be able to use 6 threads.

Whether or not it was 'necessary' (i.e. if the extra two cores gave a perf boost) I couldn't tell ya, as I never benched it or anything.

I don't think HT is 'necessary' for gaming, and doubt it will be anytime soon, but if the HT model is not that much more, I'd probably invest in it as there's other things that can use the extra HT threads, and some games will likely eventually be able to use them.
