If you're looking at just headsets, the Sennheiser PC360 shouldn't be a bad buy, although they might be a bit out of your price range. Some cheaper alternatives are the Razer Carcharias, SteelSeries Sibera V2, Corsair HS1A, AKG GHS-1, and Creative Labs Tactic3D Sigma.

As for the Zalman clip-on mic, have you tried boosting the sensitivity of the microphone? There's usually a slider in most in-game control panels that will let you do this.

I'll probably be using Ventrilo most of the time for my voice chatting, so maybe I can tinker with some of the settings there.

I'd be willing to wait until Christmas and spend more, but only if there's a headset that has the audio quality of the recommended AD700's and other quality headphones. I guess I could also consider a desk mic.

You won't be getting that from any "gaming" company. You could argue for the more expensive PC360, but even then the AD700s will have a larger soundstage. There really aren't any price-competitive alternatives, unless you want to give up on some positioning.
