i wanna upgrade my core i7 870 and motherboard to sandy bridge whats the best value for around 550-600 all together?

I would personally wait also til ivy bridge...
Your SLI setup has enough GPU power and not bottle neck for i7 right now...

Personally at high resolutions at 1080p or above, CPU difference between the two in gaming is very minimal...

Even so, the extra amount of money you're going to put in for SandyBridge isn't going to produce results that'd justify the spend.
I'd also wait for Ivybridge.
