Yep, another noob with build questions...

Recently had a NVIDIA GeForce 560 Ti fall in my lap, but I have nothing to put it in!
Thought I'd use this as a chance to ressurect a hobby from my teens, but that puts me wayyy out of date (no I won't tell you how much), so I need some advice.
May as well consider me a noob for all intents. That being said, here's my prospective build:

Processor:
Intel i5-2500K, plan to overclock
Motherboard:
ASUS Maximus IV GENE-Z
RAM:
Corsair Dominator GT 1.5V 2x4GB@1866MHz CAS9 w/cooling fan
(SEE QUESTION 2)
Hard Drive:
Corsair Force 3 Series 120GB SSD (Model: CSSD-F120GB3-BK)
(Intel 320 Series, Model: BBSSDCW120G3B5)
Power Supply:
Corsair AX650
Video Card:
NVIDIA GeForce 560 Ti (will likely add a second one of these)
Case:
Corsair 400R
Cooling:
Corsair H100 (top radiator mount)
2x 120mm intake fans on side vent
Optical Drive:
?
Operating System:
Windows 7 Home Premium

This is mostly meant as an all-rounder. I'll be using it to 1) do a first time build, 2) learn about overclocking, 3) play games (Fallout 3, Fallout: New Vegas, Elder Scrolls: Skyrim, etc.), 4) HD video, internet and downloads.

As a note, I will be upgrading (processor, motherboard, and RAM) when Ivy Brige comes out, so any advice on making the rest of my components more compatible would be appreciated. Now on to my specific questions:

1) I chose the ASUS GENE-Z because it seemed the best combo of what I was looking for (overclockability, high-quality built-in audio/LAN, good price), basically everything I think I need without stuff I don't. Granted, if I add a second GPU, I can only run it in dual 8x mode, but online sources seem to think that runs stronger than the dual 16x mode the NF200 chipset offers on the Z68, so it seemed OK. Alternates: ASUS Maximus IV Extreme-Z (costs 2x as much and requires a EATX case) or Gigabyte UD series likely the 5 (same case, but about $80 more). Anybody know any better options?
2) Do I need to splurge on the higher speed RAM? I remember seeing a benchmark chart showing 1866MHz as the point of diminishing returns on Sandy Bridge, but I also read that 1333MHz was the highest 'officially' supported speed so I'm a bit lost there. Same thing on the voltage. I've read conflicting opinions on 1.5V vs. 1.65V, but the majority say to aim for lower voltage. *Found a set of Dominator 4x2GB@1333MHz 1.6V with CAS7 latency for a great deal, too, but it says AMD on it. Can I put AMD memory in an Intel build (is there even a difference)? Since timings seem to be more important than speed on Sandy Bridge, it seems like the ideal.
3) Hard drive wise, if anyone has experience with either of my choices I'd appreciate feedback. I don't know if I can justify stepping up to the Corsair Force GT series, which is why it's not listed. (I also plan to add a second identical unit to run in RAID 0, and likely a conventional HDD as a backup/media storge unit).
6) Anything I'm forgetting?

That power supply is WAY overkill. You can SLI 560Tis on a 650 watt. Look into the X-650 and AX650 if you're looking to go for gold rated.

Along side the SSD do you plan on getting an actual hard drive for storage? If so I would recommend getting the Samsung F3 1tb. They are faster then the caviar blacks and much cheaper.

A standard HDD is on my upgrade list, but it's non-vital to the build as I have several external HDDs (nothing spectacular, but they serve). Advice noted on the power supply and Samsung HDD. Had also considered the Samsung 128GB SSD, always had good luck with Samsung stuff.

I can't comment on the SSD because I'm not up to date on any brand SSD but I can definitely vouch for the F3. If you need more advice I would look at this. Just look for your card on the SLI and it will tell you that all you need is a 650 watt. That includes overclocking so you have no worries about headroom.

IMO grab some g.skill sniper 8gb 1600mhz at 1.25v....you can still tighten timings/up the frequency as the voltage is still low...also...are you willing to spend a lil more on your cooling?i think you can get something better than the h100 in terms of using 240mm rads...that is, if you're willing to spend time in maintenance of your cooling system
