Won't be able to use that promo code, since I'm not ordering for a few weeks. Will likely go with a set of these:
Vengeance (Red) 2x4GB 1600MHz 1.5V CAS8 8-8-8-24
Should I grab 2 of these, or is that just overkill?

One set is already overkill. I would go with just the 8gb.

So the revised build is looking like this:

i5-2500K
Asus Maximus IV GENE-Z
Vengeance 2x4GB 1600MHz cas 8 8-8-8-24
Corsair Force 3 120GB SSD
AX650
NVIDIA GeForce GTX 560Ti (x2 eventually)
Corsair Carbide 400R
Corsair H100*
+2 120mm side vent fans
Windows 7 Home Premium

*I chose this based mostly on ease of use. Would willingly spend a bit more on a better cooling unit, but would prefer a maintenance free setup (or as much so as possible). New to water cooling, so I'm not entirely sure what's out there.
I would say instead of the H100 you can go with a Rasa kit if you're willing to go into watercooling. You can get a 240mm radiator kit for right around that price with a better block but you will need to take up two 5.25" bays for the pump/res.

I was thinking of getting the H100 as well but if you say the Rasa kit is better could you post a link on where to buy the kit.

EDIT:
Nevermind I found the kit on another site. That does look like a really good kit.

The power supply should be fine if not a bit overkill, but will be worth it should you ever buy a second video card.

Personally I would go with 8gb of ram because now days ram is really cheap and it could come in useful if you ever do video editing or play games in windowed full screen with other programs running. The ripjaws linked already in the thread are a good buy.

As for question 2 I would say don't buy ram any lower than 1600mhz now days, you can get fast ram cheap enough that its not worth the drop in speed.

Only other thing is the H100. It's a good cooler and all but for the 2500k an H80 would do fine since the I5's are very cool overclockers. But if it fits in your budget go for it.

Your build looks solid you should be happy with it.

The Rasa kit does indeed look excellent. I may have to consider swapping out for it. I'm still attracted to the sealed units Corsair offers, though. I may save the 'component' water cooling for my next build, when I upgrade to Ivy Bridge.

I would like to revisit the memory question. Going with the Vengeance makes alot more sense over the Dominator GT due to it being half as much. Now, assuming cost weren't an issue, would it indeed be better? Or do the tighter timings/lower latency on the Vengeance cancel out the higher speed on the Dominator GT and leave them essentially equal?
the rule of thumb is each digit lower in cas latency is equal to a notch high clock speed (i probably did a horrible job of explainin this) so 1333 with a cas latency of 7 is equal in speed to 1600 with cas 8 and 2133 cas 9
