I've noticed that too. It is because of the game settings and he is running fraps. Crysis can put any system to their knees with the correct settings

If your question is will you see a big improvement? Absolutely.

Will you get the as many fps as someone with an i7? No.

Are you saying that my CPU oveclock is limited by my motherboad's VRM's not being cooled enough?

The NZXT Phantom's 200mm fan right above my MB does a decent job, I could try fitting the side fan (have been considering it anyway) - either a 200mm or 230mm, but my Dark Knight CPU cooler leaves me with only enough room for a 25mm width fan or less - Xigmatek make the 200x200x20mm fans I was considering.

My temps are well within reason - HW Monitor CPU temps hit 55-58 load (I might have seen 61 on a hot day) but the core temps at 7-10 degrees lower (they disappear when unlocking, but equivalent values tested in triple-core mode.

My CPU-NB is @ 1.35v. I've never taken it above 1.4v I don't think.

CPU is at 1.475 or 1.5v, never taken it beyond 1.525v and can only get somewhere in the low to mid 3600s. NB doesn't seem to want to go higher than 2560 without more serious voltage. Starting to hit diminshing returns that simply aren't worth the incremental performance difference.

The question was technically neither.

Of course there will be a decent increase, and of course I won't match a the scores that someone with a superior platform will. The question was and remains, will MY system currently be enough to "feed" the GPU's enough to make it worthwhile, or would I need to upgrade to a 1090t with potentially 500mhz extra (from my current OC) on 2 more cores with 500mhz extra on the NB AND the ability to run my RAM faster. Would this make a difference in "feeding" the 6850's and thus minimizing or reducing the potential CPU bottleneck down to a largely irrelevant point.

In most games it will be relevant, in some games you will notice. Is it worth getting anyways? I think so. Is it worth considering getting a i5-2500K system along with it? I think so.

No im not saying your limited by your vrms im just saying every little bit helps with a c2 chip. they are very hungry chips.
They have a 140 watt tdp when unlocked.
Also you have hit your wall with cpu speed.
The good c2's hit there wall at 3.8ghz so 3.5ghz is deff are wall as our chips have cruddy silicone. Um try to see if you can get your vcore lower and deff try your cpu nb volts at 1.45v and try to get 2700mhz on that nb cause thats where a good amount of performance is.

Well since the 6850 is on the table. Good

Since an i5-2500k is completely off the table. Ok.

Since a 1090t is potentially on the table. The jury is still out.

Yeah, those C2's are annoying haha.

And it's not 3.5ghz - I'm at 3.58 comfortably now, but I can absolutely clock at 3.63, just requires significantly more voltage - diminishing returns.

I'll definitely see if I can squeeze a little more NB out, but if it's not at least 100mhz more for .75v I can't see it'll make that much real world difference.

I'll probably try and find myself a Thuban asap honestly, perhaps 2nd hand. Or if I come across a C3 955/965 real cheap maybe I'll grab that, but at this point the difference there would be significantly less than the equal speed gains but also 2 extra cores of a Thuban.

A Thuban won't help if your just gaming over a well clocked 955/965, but they have a good chance of clocking higher period. They perform very well with multi-threaded programs, in games, they're pretty much equal to their Quad cousins.
