Last question guys.

I'm looking at these two.
I'm looking for a bit of an overkill, as you may have notice, for the future in case I plan on doing anything extraordinary. I don't mind spending the extra for a PSU. I don't want anything to crap out on me because of a bad PSU.

The Corsair AX850 is the Corsair rebrand of the SeaSonic X 860, which is basically the same as the SeaSonic X 750 except for the higher power rating.
From that point of view, the fact that the Corsair is newer is of no importance, and you will get the same level of performance and quality from either unit. The decision is up to you whether you want to go with 750W or 850W.
That being said -- you mentioned you'll be sticking to a single card setup. With that in mind, I see no reason to get even a 750W unit, that's a total waste of money. A 650W unit is enough for any single video card on the market, including monsters like the GTX 590 or the Radeon 6990. 550W is quite enough for a single GTX 580.
