Sorry, I run mines 100% past 70c so I can't comment on that. I don't mind the noise, but it is noticeable.

After a good amount of time, you just don't really care how loud your computer is if its performing so beautifully. I would assume it might get pretty damn hot already if you don't have a case with good airflow.

Nerfing the fanspeed to 50% might get really hot (past 75c, which is definitely safe). It might be best just to leave it on auto or maybe just get used to the noise. If your overclocking I would recommend definitely not limiting the speed.

Edit: Can't really comment on how much speed auto limits it to either. I never tried that option. It's usually best to create your own fan profile because you can adjust it to your liking.

Msi TF3 or Asus DCUII are nice quiet 580's. Although the asus ones takes 2 slots so you might want to consider that before purchasing.

I would just buy 2 of the EVGA b-stock 580's at $369 each and call it a day. They're reference cards.

Anything extra I can do to keep them quite and atleast never exceed 85c. 2 reference 580s. Anything?

I got two 580's on a single monitor. I have the 1.5 GB versions and will eventually upgrade to a 120hz monitor to display the actual frames and get the smooth gameplay my machine was meant for.
It matters on your case too and motherboard and the layout of your videocards.
My two GPU's are literally sandwiched together but the temps are reasonable (87C top and 82C bottom under load)... and do not spin at full speed ever...
I like EVGA and their excellent customer service support and they also have super clocked ones. The GTX580 in general is good to have SLI as their cards are meant to be sandwiched together (have air inlets at the ends of the cards)...
