so which kind of 12GB kit is better for x58 motherboard? It's been awhile since I read up on anything computer related and I'm really out of the loop.

Isn't it better to use only 3/6 ram slots? In that case I would do 3*4gb.

Usually, but its based more on the number of banks than the number of DIMMs themselves.

Personally I wouldn't buy the best unless you know that memory speed is really limiting you

1600 CL9 or CL8 should be plenty for most applications/gaming.

If you still want the fastest you could look at:

1.5 kits of http://www.newegg.com/Product/Product.aspx?Item=N82E16820231437

or the rare:
