would it be better to connect the Dell U2311 to the MSI GTX580 lightning via DVI or DisplayPort

DVI cords are cheaper in general, I'd jsut go for that. DisplayPort is better if you plan of unplugging a lot, though.

didn't think the gtx 580's natively had display ports... I thought all of them had two DVI's and a mini HDMI???

it's probably a displayport running in DVI-compatible mode then, so it'll make no difference which you use at all...
