I never heard of ASUS unlocking the cpu for you, but to answer your question YES you need the "K" version... it will OC better and that version is made for OC people.

So I've decided to go with the Maximus IV Extreme Z and i7 2600K. I'm fairly new and still not quite understanding of ram timings and speed, so would Corsair Dominator GT 2000 9-10-9 or Corsair Vengeance 1600 9-9-9, both 2 x 8g, be better?

And to mcc21, yes I had an Asus with my AMD Athalon XP, and it unlocked the multiplier for me. Though I'm not sure if they still do that, I thought they still did haha

You really don't need 16 gb of ram. 8 gb is more than enough and usually overkill, but for the price nowadays it doesn't matter.

Go with the Vengeance as they are excellent ram and stable at 1.5V

Also ... unless you planning like 3-way SLI ... there is no point of getting that motherboard. There are many good motherboards that OC as well that are in the $200-250 range.

Oops I meant 2 x 4g, sorry. And I want it mostly for gaming, and just being able to play them maxed out for a while to come. I'll only be using one monitor but I'm considering trying the nvidia 3D, so ill be using a 3D monitor

What gpu are you using? You never specified it yet.... you will have a good set up with the i7-2600k, but a lot of games are gpu intensive nowadays.

If you plan on just one monitor...and wanna try 3D ... I suggest using the GTX 580.

Just remember ... if you going wih SLI GTX 580 ... get at least a 850 watt psu.. and if you going go 3-SLI a good 1000 watt psu.
