Will Applications actually make use of Bulldozer's 8 cores?

I mean, I thought that very few games even used more than 2 cores? And now FX CPU's are coming out with 8 cores? Will applications actually put all of these to use?

The reason I am asking is that I just got my paycheck for my summer job so I have a lot of money to spend on upgrading my PC, and a new CPU and Motherboard should be first since my current CPU isn't that great.

I'm trying to decide whether I should just go with an i5-2500k or wait until Bulldozer comes out.
Eventually. However, past such amount of cores it's how many stuff you are doing at the same time - not how many cores a single application can use.

Edit: Oh yeah, my advice is not to upgrade at all actually. You already have an awesome quad.

Most games won't, plenty of other apps will (content creation, archiving, virtualization, and so on).

Games won't be much faster then current CPU's, and yes, I would wait and see what Bulldozer has to offer. Nothing wrong with a PII 965 until then.

I'm hoping Bulldozer excels in multi-threaded (F@H for example, and I'd like to be able to convert 1080p without watching the grass grow).

Eh, I don't think so. My friend just upgraded to a i7-2600k from a 955 BE and he noticed significantly higher FPS in some games even though he didn't change his GPU.

Also, correct me if I am wrong, but isn't the Phenom architecture really old, like from 2003 or so?
The Phenom Architecture IS old. But if your not willing to wait and see what Bulldozer has to offer, nobody is stopping you from moving to Sandy Bridge. I hope your friend does more then just gaming

Bulldozer has the ability to share other components within a module.
So if a game only uses 4 cores, it would use 1 core in each module.

That's one way to make up for the lack of single core performance (but still faster than current Phenoms).

A lot of apps will use the 8 cores, including video editing which I do on my PC. I am interested in the 8 core model.

Gamers may be more interested at the lower cost 4 core model or 6 core model.
Well I'm waiting to see what BD brings to the table. I game and do video editiing too.

If all else fails, you'll be able to get an Ivy Bridge processor, or SB-E by the time BD is released.
