hmm i can do that. it sound easy enough. so my old hdd is in achi mode. umm i cant spell that word lol so would it work same on ssd if i do copy everything?

AHCI means Advanced Host Controller Interface. It's a setting of the SATA controller.

You can just leave the HDD connected as a secondary drive and transfer anything you want in the way that you want. That's why that easy transfer stuff isn't necessary.

and how to handle ssd properly...like trim,..what about defrag,etc i havent learned about that but i would get a ssd cuz i saw a benchmark it was pretty fast.

Never defrag. It won't kill the SSD or anything, but defragging is only beneficial for hard drives because they have a round, spinning disk.
