The prebuilt quality 3 phase on the ASRock N68-S3, as well as the older nVidia chipset, will prevent you from getting any significant OC.
See if you can increase your mobo budget.

M4N68T-M LE V2 uses a 3+1 phase... again not very overclocking suitable, esp. if you are to unlock cores.
Look for a quality 4+1 phase board - with cooling, if you use an aftermarket CPU cooler and/or unlock cores - for best overclocking experience.

M4A78LT-M is a good choice, remember to ensure it is properly cooled if you unlock cores or use an aftermarket CPU cooler which blows over the FETs.
