you can't run 3 monitors on a single 580, you would need to go SLI.

Plus you'll have problems running three monitors @ 5760X1080 resolution with a 1.5 GB 580 . You should go with the 3 GB version of the 580s in SLI (required). Also, if you want to watercool your 580s, you definitely need to find reference cards so the blocks will fit.
