Crysis is always good to test your card. But as for the pretty game try Bad Company 2, it might not be 1080p and such but has really nice graphics and gameplay. Don't forget to check out Battlefield 3 when it comes, it will be king when it comes out.

Crysis 2 with DX11 patch and high res texture pack installed. Eyegasmic stuff right there.
any crysis game really.

I get 30+ fps crysis 1 max settings 8x AA on my 560ti hawk and it looks really nice.

GTA4 texture mods look amazingly good as well.

Metro 2033 is also a great looking game but it won't be perfectly smooth with a 560ti unless you lower some of the settings or you play on a really low res.

Metro 2033
Crysis 1 w/ configs + mods
Crysis 2 w/ DX11 + Ultra textures

The Witcher 2

For me it's still Crysis.
But I already played that even with my GTX 275 896MB on 1440*900 at max. with 8xAA.
Now with a GTX 560 (non Ti) @ 850Mhz it just got 100% playable (min 28FPS) with same settings but on 1920*1080.
Kinda sad. You'll have to wait for PS4...
