The easiest way to set it back to stock will probably be to restore default settings in your bios. When you are in the bios there should be an option to restore to default.

Sounds like Turbo Mode. It's normal to fluctuate like this.

71 degrees C is not unusual for a Core i7 at load. Don't worry about it.

I realise this is probably all over and done with, but, why is the qpi voltage so high? If it's not being overclocked that much, 1.4375V is huge compared to what it needs to be (1.2V ish?). Heck, my G/B mboard figures that anything over 1.335V is in the caution band...
