got me a galaxy tab 10.1 & want to know, what can rooting do for me?

Rooting your tablet (or any other device for that matter) is like unlocking the administrative account on a pc. With root access folks are able to tweak the system to their liking.

This includes things like:
- improving performance (ie. overlocking)
- wi-fi or bluetooth tethering
- updating the Android OS at your choosing instead of waiting for your carrier to update it
- editing system files so you can theme and skin your phone/tablet
- run apps that can't be run on an unrooted phone

However, there also risks involved such as bricking your phone and voiding your warranty.

You can also flash custom roms to it, of which many are designed for speed (such as cyanogenmod 7, but that's phones only I think).

Also, you can back everything up easily, and there is a method to get apps for free but I don't know if it's ok to post it here or not. I don't encourage it anyway, as I like to support the developers/android

Really there isn't much else other than what Maniak pointed out. If you're a developer or into custom roms and such there is plenty of stuff on it, but for most end-users, rooting makes only a small difference considering android is already very open and unrestricting.

- improving performance (ie. overlocking) - You wont notice much difference unless you OC it quite high which is quite bad for such a thin device.
- wi-fi or bluetooth tethering - Comes as default with recent versions of android
- updating the Android OS at your choosing instead of waiting for your carrier to update it - Good point
- editing system files so you can theme and skin your phone/tablet - you do not need to root it to change theme
- run apps that can't be run on an unrooted phone - good point

In my opinion, rooting is only worth if you are an expert/power user who would like to customise every aspect of the operating system. Also note that, if something goes wrong you will need to fix it yourself (well an expert user would know how to do that).

But you are charged to use them. Rooting allows for 3rd party tether apps that work around the carrier's apps.

I'd agree with that. You can create underclocking profiles with setcpu as well to conserve power, but I don't know if android does this anyway.

There are some root only apps that I couldn't live without, though, like callblocker (does what it says). It's great for weekends when work rings up - can pretend my phone is switched off or out of cell range
