Well the following:
EVGA GTX 580's
is your best choice. The vapor chamber cooling is effective for air IMO and definetly leaves the door open for water block down the road.
/customer support/user forums over any other choice you can think of for your desired use.
From 6870's to 580's - that's a 2 1/4 GPU step up upgrade.
From 1GB to 1.5GB - that's 512MB VRAM upgrade.
So will see better performance, still a step up.
I can fully understand where Juano is coming from. Think ahead and cover yourself, maybe by waiting until you can afford the 3GB versions. Pricing will drop after the new GTX 680's are released. Triple monitors really require 2GB VRAM minimal for performance. 3GB will give optimal performance and give you head room for further 'future' usage. Multiple monitors eat up VRAM.
It sounds like your not having issues with yours if your running three monitors on 6870's with 1GB VRAM. Must not be doing any heavy gaming currently? IF you are, aren't you getting stutter and jagged frames? You playing games with settings turned way down? What games do you currently play?
Another option you might want to look into is two EVGA GTX 570 HD 2.5GB
From 6870's to 570's - that's a 2 GPU step up upgrade.
From 1GB to 2.5GB - that's 1.5GB VRAM step up upgrade.
