I would definitely wait. 570 would only just do it for 3D. Especially in newer games. 670 or the likes is what you should look too January-March next year

You have a 6950 2gb with shaders unlocked, for me the only reason i would change it is for a GTX 580, you won't feel any different with a GTX 570 or wait till February.

Either hold out or get a second 6950 for crossfire. That's what I would do. But then again I still have a Q6600 and DDR2 ram, my next upgrade is to a whole new platform.

why dont you buy another 6950? go crossfire.

And dont change it with a 560ti plz. 6950 is better then 560

Have you tried 3D? I personally didn't like it that much (it's still not perfect). If you haven't tried it I suggest you do.
3D puts extra stress on your graphics card so the extra performance from the 570 would 'disappear'. And if you want to play on highest settings then one 570 won't get 120 fps with current games.

I would get a second 6950 and crossfire them to get the most out of your 120Hz monitor. But that's because I don't like 3D and prefer high and stable FPS.

I play over half of my games in 3D with just one of my GTX480s
And imo the GTX570 is better than my 480, but hey
