i7-2600k @4.4GHz, 7 fans, 4HDD's, 1SSD, SLI GTX 460 1GB's @ 900MHz Core Clock at 1100mV's and everything else with Prime95 Blend Tests and Unigine Heaven v2.5 (from the wall):
CPU Load Only: 277W
GPU Load Only: 468W
Combined Load: 558W
Note that SB is more efficient than the i7 950, and 1100mV's at 900 Core Clock instead of 1212mV's at 970MHz Core Clock also reduces the wattage.
Really up to you. I always recommend a higher PSU than others so you're running at most half of what the PSU can handle and have room for upgrades or overclocking, while others will recommend the bare minimum to run at 70% or higher to save money.
