I would research the NF200 chip, as there is a lot of debate whether it can run 16x 16x or not.

1x16 lane PCI-e or 5x8 lane? HOLY SMOKES lol.
That is one beast of a motherboard. Looks good so far. If you are set on 2 way SLI then you may tone down the motherboard. If you want to keep your options open for 3-way SLI then proceed.

Also one thing should be added just in case. Newer graphics cards are coming out potentially around christmas time to 1st quarter 2012 (unless delayed further). PCI 3.0 spec boards may be something to look into, but honestly I dont think it's necessary.

By the way, Yeah, sandy is Dual channel, but 16gb is not overkill if you are gaming, folding, editing and virtualization... I, just in browsing sessions have sometimes up to 3-6gb (and heck, just Chrome sucks up 2gb and that one is never closed ). If you like leaving your PC on, then more memory will make your life easier, even if you don't leave it on, picture leaving your browsing session opened, rendering a file in Vegas /After effects and while its done, playing incoming Battlefield 3 on the secondary monitor you can't do that effectively with 8gb of RAM

If you're going for a custom loop, might as well go for a rasa rs 240. cost $10 more and it's a great way to start watercooling

A 360 rad should be able to cool a CPU + GPU loop good enough.
