You will have a great Field Of View as long as you use a 16:9 resolution!
So no matter if you go 1600x900 or 1920x1080 you will be fine.

Just be sure to stay away from 16:10. It sucks big time for games (and most other things as well).

I tried to get SC2 to work on my tri monitor display but the developers limit it to one screen. From what I understand the SC2 community feels that tri monitor displays or anything with a bigger fov than 1920 x 1080 is cheating thus they patched anyway to make it possible.
