Prices will fluctuate some.

I imagine OP does 'Let's Play' or Machinima?

Since game performance doesn't scale too well with hyper-threading. Drop the i7.
I imagine an OC'd 2500k should be able to muscle through a couple programs.

Depending on the level of OC, you could go for a cheaper board and buy other components.

Z68 and GTX 5x0 for Quick Transcode and CUDA accelerated stuffs in AE and Premiere

If 8GB isn't enough initially. Buy a second set later (It'll probably drop in price).
Do not buy high profile RAM if you're planning on air cooling.

I like these. or G.SKill's Sniper

With one card. I suggest this psu.

Case: My flavor of the week.
Well I don't do 'Lets Play' video's I edit some stuff like this, not advertising but the video I post here is around 30 seconds, and with the effects and transitions I use on Vegas alone took around 20 minutes+ to render. There was one time I couldn't even render a video cause it took too much memory.

Okay so I raised my budget just a bit to 1500, thats hopefully including tax and shipping.

I adjusted some of my own things, but I just want to know this.. Will my system be future proof and will upgrades be simple?

Such as,. From what I have read ATI and nVidia will be releasing new line of cards in Q1 of 2012, will that basically cause my GTX580 to disappear from the market?

When Ivy Bridge hits will it be compatible with my board? (P67 or Z68)

If you want to future proof don't get a 750watt PSU, get more in the lines of an 850 so you don't have to purchase a new one if you decide to SLI your 580 down the line. You can get a bigger one also, 850 is sufficient for 580 sli with Overclocking everything

MSI N580GTX Lightnings vs EVGA SuperClocked 580GTX

Dont go SLI 580s, already told why not, or reread my think about SLI in this post. And yes 750w is still 100% fine for SLI 580s so anything more then 750 is kinda silly. If you are getting only 1 GPU (in which you should) go with a modular active 650.

And no Ivy will be a completely new chipset
