Oh,
Why getting a i7 920 when you can get a 2500K? Why getting 2x560's instead of a single 580?

Here are a few cooler suggestions:
Noctua DH14, Thermalright silver arrow, Thermalright True, BE quiet dark rock, , Corsair A70, Akasa venom. They all good.

So far at OCN, people consider V8s and V6s not good enough for their size or price.

Well, SLI GTX560 performs better than a single GTX580, I don't know about the prices but it is your choice.

On paper, yes. But not all games support SLI do they? SLI is more complicated, not always give more performance than single 580, probably consume more power.
