Best video card for my current setup below? My cpu is currently OC'd to 3.7ghz.
So something that won't bottleneck anything

I have $300 to spend and want to replace this weak 6670.

Don't mind either AMD or Nvidia

GTX 570 if Nvidia, Radeon 6950 if AMD

I'd say try spend the little extra and go for a 570, they are definitely better than a 6950.

Will the 570 smash every single game out there with max settings with aa/af at 1920x1080? Im a sucker for highest settings. Is there a big disparity between 6950 and 570.

IMO I would get a 480 the added VRAM would help and if you SLI them they're beast

Yes. I haven't encountered a game that can slow my 470 down, and the 570 replaced it - so it should perform even better.

At 1920x1080, there won't be any difference between 1.2GB and 1.5GB unless you use 16x AA constantly.
