It doesn't imply more content, just a more linear main quest. In Morrowind the "end" of the main story is when Dagoth Ur dies. The tools needed to kill him are there from the beginning. The various main quest paths are there so you can figure out who Dagoth Ur is, what his goals are, and discover what you need to put him down.
I was assuming it was the same in Skyrim.

I imagine so. Oblivion was the same way as well, you could beat the main quest in a few hours. The side quests is where the time is added on

How so? I seen Morrowind "beaten" in a few hours as well by normal users and a few minutes by nut bags. The definition of "beaten" here is that they finished the main quest line.
Example is here

Only time I seen a 100% complete game they called it a Perfect game.

I don't consider finishing the main quest to be "beating" the game.

Wow, never fails to amaze me what some people think are real accomplishments.lol

I usually find it entertaining to watch these speed runs after I've finished the game in question.

As long as you are having fun is there truly a wrong way to play the game?

But according to everyone else "beating" the game is just the main quest. You still have completed the game, you just didn't take the time to do any side quests. Honestly I hope skyrim gives me as much entertainment as Oblivion did back on my old Xbox 360 gaming days because I'm pretty sure I have 450 hours total on Oblivion. Man I loved that game. I only have about 5 hours on PC though because I just played around with some mods and that was about it.

I get that it's only the main quest, done as fast as possible... but I still sorta wish they would wait until after release before doing this type of contest. It makes the game seem small.

wow, that's somewhat disappointing. Hope there's more to it than that... there always is, but I mean, 2 hours is WAY too short for a campaign.
