Which Graphics are best for me?

Hi, Im building my first rig soon and im trying to decide which graphics brand to use, and i can't really seem to decide, ive worked out most of my other options, like being locked into using Core i3/5/7 by wanting to run hackintosh and the other decisions are based on previous use in other computers, ive used a AMD card and for all purposes ive tried its worked fine (Just Cause 2 hits 30 FPS on almost max settings on my 5570), but ive heard alot of good things about nVidia's drivers and SLI rendering, so ill basically tell you guys what im trying to do and you guys can give me your opinion. First of all, heres my stats so far:

CPU: Core i7 2600K
Mobo: Asus p8z68-gen3
Graphics: ??? in SLI/Xfire
Case: Corsair 650D
RAM: Corsair Vengeance 16GB RAM
HDD: Seagate 2TB 7200RPM
OS: Windows 7/Mac OS X Snow Leopard/Ubuntu 11.10
Monitors: 24" 1080P 16:9 X 3

Games ill be playing (On 3 Screens): BF3, MW3, Crysis, Dirt 3, Assassins Creed, etc...

What do you guys suggest?

budget?
I'd go with AMD for Eyefinity. 6950 2GB or 6970 (2 if you can afford them)

well whats your price range? i'd go with the 2gb 6950 and flash it to a 6970. furry creatures suggestion of the toxic 6950 is good. however if you want something cheaper and with more fans go with the normal saphhire version. they all have a pretty good chance at unlocking. 70% i heard. http://www.newegg.com/Product/Produc...82E16814102945

Okay so scratch the hackintosh, seems like more trouble than its worth with newer graphics cards, but i have a question would 3 weaker cards beat 2 stronger cards on 3 screens? like 3x GTX 460 vs 2x GTX 560 Ti? and what about memory? would i only have to get 1GB cards if i ran 3? cuz thats 1gig for each monitor which seems to be enough when using just one.

it seems like, just by logic that the 3 weaker cards would do better just by logic cuz it would be one card running each screen i guess but i don't really know...
