2500K without a doubt. However, if you're looking to record, compress, and edit your game recordings, then the 2600K could help that, but if it's strictly for games and no rendering work then the 2500K is the best deal.

Not too many programs benefit from Hyperthreading, and in my experience hyper-threading sometimes hurts more than it helps in some because I use a lot of stuff that runs on Java with a single thread.

I wouldn't even say the 2600k is future proof when the 2700k is coming out along with Ivy Bridge.

Get a 2500k and upgrade to Ivy Bridge later on if you feel you need to.

2500K definitely if its just for games. 2600K if you really need HT.
