For the most part I disagree.
After using a couple of custom ROM's they're basically just 'themes' with different swipe actions. You can get themes on a jailbroken iOS but don't get me wrong, that only means different apps and styling. It's still the same old scroll page scenario.
Yes Android is more customizable than iOS. But anyone who thinks iOS is locked down and not customisable has (in my opinion) never used a jailbroken iPhone. It really can do a lot of things, maybe not as much as Android but you can still highly personalise it.
Again a lot of people will use the argument that iOs is still limited to the scrollbar app drawer, but I have always said and will always stand by my statement that it is simple, intuitive and it works. Every single phone company would rip Apple's iOS GUI off if they knew they could get away with. Hell, Samsung tried and failed with the SII.
However ultimately, you are right, iOS is not as customisable as Android.
Also as for the Android is open source.
A point and shoot is still a camera, but it is not in the same league as a DSLR.
I akin Android to that scenario.....with it being a point and shoot.
