Neither way is a win, two steps forward one step back. What you should do is get a P67/Z68 board with an NF200 Bridge chip. You'll have the bandwidth needed to feed the cards as well as the cpu power.
so then 16x 8x 8x on my M4a79t AMD 790FX/SB750 have too little bandwidth?
Would I see big improvement with a Intel NF200 chip?

My goal is to get most out of 3x 6950 2gb in eyefinity.

Going the AMD route will give you the bandwidth lane wise, but you will still be cpu bottlenecked.

You won't see an improvement with an NF200 in the way you're asking about it because you're misunderstanding how it works. The NF200 basically enables you to use more lanes, bridging off the original x16 default and giving an extra x16 lanes in short. However, you'd still have to provide enough cpu power to run the cards. This is where going with a 2500/2600K will pay dividends.

I could be wrong but I think 5760*1080, add in some detailed graphics, 4xAA and a 3.8ghz Phenom II should be sufficient.
