Hooking up AD700's to Xbox 360 and PS3?

I am buying both an Xbox 360 and a PS3 and I need advice on how to hook up my AD700's to the consoles to hear in game sound. I thought I could just buy a female 3.5mm to female RCA and connect the headset to the Xbox 360 and PS3 AV cable, but now I realize that if I do that I will not be able to control the audio.

I don't care about talking to people on Xbox live, I don't like those people anyway. I just want to hear in game sound instead of buying those $50 Earforce headsets that sound terrible.

So what would be the best way to hook it up? Is there any kind of RCA volume control I could buy?

Your television probably has an RCA audio out. You could hook up to that I think.

I don't have a TV. Both consoles will be hooked up to my monitor via HDMI. However, I will plug in the A/V cables as well to export the audio.

Get a digital audio converter (DAC) such as the Fiio e7 to get this setup. It will also make the quality very nice.

So I personally have an old Sound blaster extigy set up with optical in from xbox then out to my headphones. With CMSS the directional audio is wonderful in games like Black ops. I use it with a pair of AD700. Since that is kind of hard to find nowadays, a more modern solution would be either the Earforce DSS or Astro Mixamp. My housemate has the Earforce and is pretty fond of it. All three devices work similarly; optical in from the consoles then outputs simulated surround to your headphones. The effect is pretty good in my experience.
