Are you fixed on Nvidia? because for $50 more you can get a 6950 Toxic and unlock it to a 6970, that's prob the best Price for Performance Gpu IMO, but thats if you have the money, and you drop your idea of a nvidia based system!

I have my settings on high and I'm typically using like 1015mb of ram. I'm sure it'd be using more if I had it.

the problem 560ti is 1 GB ,,,
heavy gaming today start using more than 1 GB, if u max out everything even on 1 screen at 1080/1200p,..
ex:
-BF 3, (Set MSAA to max, will use vram a lot, the game will utilize your vram if u have more vram.)
-Crysis series(if set MSAA to max, and on crysis 2 if using High texture DX11 pack, will use vram a lot)
-GTA 4(everything detail on 100, will take 1.2 GB vram),
-Metro 2033, (most heavy game, everybody know this game is heavy)
-RAGE(the engine using very big mega texture gaming, will use vram a lot),
-Shogun 2(many object during battle at 1 screen, will use vram a lot)
