The problem with a 560 Ti is the 1GB. Games are already starting to use more than 1GB of memory @ 1920x1080. Getting a 6950 with 2GB of RAM and putting it in crossfire is a much better idea for being future proof. Also I went through looking at either a 6950 or a 560 Ti for my lan box today and the 6950 was the winner from what I found across many forums and reviews.
EDIT: Posted at the same time as you and saw you are going nVidia only. Too bad, but if that's the way it is make sure to get a 2GB 560 Ti.
the problem 560ti is 1 GB ,,,
heavy gaming today start using more than 1 GB, if u max out everything even on 1 screen at 1080/1200p,..
-BF 3, (Set MSAA to max, will use vram a lot, the game will utilize your vram if u have more vram.)
-Crysis series(if set MSAA to max, and on crysis 2 if using High texture DX11 pack, will use vram a lot)
-GTA 4(everything detail on 100, will take 1.2 GB vram),
-Metro 2033, (most heavy game, everybody know this game is heavy)
-RAGE(the engine using very big mega texture gaming, will use vram a lot),
-Shogun 2(many object during battle at 1 screen, will use vram a lot)
