mid build indecision! help please

thanks for reading.

My sig rig has been a trooper since late 07 but the bug has bitten and much of this summer I have been planning to go sandy bridge 2500k for a completely new build so I can give my sig rig to the gf.

My dilemma is... I think I'm changing my mind to a SB-E based rig. My Q6600 has been so good to me. I want another build that I can feel confident will have enough juice in another 4 years. Four cores of the Q6600 was easily the right choice despite many back then on various forums parroting the idea that dual core was the way to go. Is another quad core now gonna be the right choice? Maybe the 2600k and it's 8 threads overall would have enough staying power? Or maybe at this point in the year.. I just need to adjust the build and go 6 core SB-E!

other notes:

I have an 850 Thermaltake in my current rig that I *could* switch out with the Corsair if 750w wont be enough. I do only plan on running a single gpu setup (although BF3 does make me pause to reconsider that) and I will be playing games @ 1920x1080p - I'm undecided on a vid card at this point. It will be the very last purchase made on this rig.

I dont render videos but it is something I'd like to learn in the future (gameplay vids). So mostly my rig is gaming centric!

Is the 750w Corsair enough? I seem to hold it in a higher esteem quality wise than the Thermaltake.

I know if I go SB-E I will need to add a 2nd set of the ram for quad channel - how much more power draw is that likely to demand?

I prefer air cooling for ease of care.. think the Zalman will be able to fit the 2011 slot if I do change or am I hosed there?

it would be better to wait for Ivy/SB-E I mean it looks like they are coming out soon and the more cores the better except for bulldozer. I could recommend a chip that will get you through another 4 years but it is about a grand for chip alone (i7-980x) will certainly work for a while as it eats 2600ks for breakfast on the benchmarks. But I imagine it is probably a little beyond the budget you are talking about. So I would wait for SB-E and hope it doesn't end up like bulldozer did.

I'm certainly leaning that way (towards SB-E) but I'm concerned with the PS still. I feel I should have gone with the 850w!!
