ASUS just came out with their Gen 3 boards that also support PCI-E 3.0. Either way, the ASRock boards are a good call.
2133MHz RAM doesn't make much difference in the games I play - maybe 3% better FPS compared to 1600. It makes a pretty massive difference in benchmarks, not that that matters. It's difficult not to spring for a set of 2133MHz memory given the way memory prices have dropped over the last year.
Anyway, looks like all the memory you guys are looking at is 1600 CL9 junk. Try to get 1600 CL7 or 2133 CL9. I would avoid 1866, personally. Check out some of the mushkin kits.
Finally, an h50 can adequately cool an i5-2500k, but it can really struggle when you're doing your stability testing. If you're running 4.8GHz and 1.40v, you may find yourself running in the mid 70s if you're using a fairly CPU intensive application or game.
