Well I finally got dual-monitors setup properly.
It seems whenever I go to look something up there's usually different people giving you a different ways to do the same thing so it's hard to tell which advice to listen to.
I'm still not able to get VirtualBox to work properly. I installed it, setup a Windows 7 VM, everything worked perfectly, then the next day it wouldn't boot up, it just freezes and all cores jump to 100% utilization. I tried booting into Safe Mode on the VM and it took about 5 minutes just to load the screen to select what mode to boot into (it rendered character at a time xD) After trying a couple of things I ended up deleting the virtual machine, uninstalling VirtualBox, reinstalling VirtualBox, installing Windows 7 again. I restarted it multiple times and it worked perfectly. I saved a Snapshot to be safe, started it up again to make sure nothing broke, went to bed, then the same exact thing happened. I restored the Snapshot I took which didn't fix anything. It's weird how twice in a row everything works perfectly, then the next day nothing changes and it won't work at all. :/ Really hoping I can get a reliable VM working.
Anywho, here's my current desktop (the leaf wallpaper isn't there on the actual monitor, it's probably just to fill the empty space in the screenshot):
