At the moment Fedora. It is always cutting edge yet not a rolling release and stable. Gentoo is fun but I gets to be time consuming when updating several computers.

Arch is my definite favorite. It's fast, bleeding edge, and is extremely well documented. And pacman may very well be the fastest package manager on earth.

My second would have to be Ubuntu. IMO if it keeps getting better, it could compete up front with Windows/Mac OS X.
