I'm redoing my order and not paying 60+ for overnight. So i'm changing a few things. Was asking for some of your opinions on this board about hardware. Trying to save a few bucks.

How about this?

in the modern age, having had an asus m4a89gtd (for AM3)and a gigabyte ga-z68xp-ud4

the asus had much finer voltage control, even though the gigabyte has 12-phase power vs the 8-phase on asus

and on the asus, I could save up to about 8 completey different bios settings, which was useful, although not completely nescessary

just some pros/cons, but in this case I would trade the ud4's 12-phase power for the asus's finer voltage control and mulitple bios save files

Those MB's listed above are all decent.

If you can afford it though, look for a newer Z68, such as a Generation 3 (Gen3 or G3), such as this one (FOUR Sata 6Gbps ports, Optical AND Coax HD Audio out onboard, PCIE 3.0 READY for IVY):

Does the fan and heatsink that come with the 2600 and 2600k really suck that bad?

It's okay for running it stock or slightly OC'd, however, if you really want to OC it, you need to get a better one such as a Hyper 212 or Corsair H60 (both good bang for the buck coolers, one air, one self-contained liquid).

That Corsair H60 looks nice. Where do you mount that thing?
