Are my HDDs on there way out?

If I remember correctly the drives in question are 2 Hitachi Deskstar E7K500.I'm not 100% sure that is the exact model but I don't think that is very important. The HDDs are in a RAID 0 setup.

When I boot up the computer during the portion of the loading screen is goes to HDDs and says there are none. I have no HDDs hooked up regular. Then the next screen shows my 2 Hitachis and in the area where it says "Type/Status ID" it now says Error Occurred (0) under both drives. I have also been having random freezing issues and things not loading how they did when the drives were brand new. Any way I can determine if they are causing my issues?

I have had this before with a RAID array that has gone bad, or a controller gone bad.

However have you thought about checking the SMART status of each of your drives. They will give you an indication to how healthy each of your drives are and I think that is a starting point. I would download Hirens Boot CD to use the HDAT2 program to check the SMART status of the drives. HDAT2 has a really good in depth analysis.
