Build Questions (HTPC/Photoshop/Low LVL Gaming)

Hey all. I'm just looking to see what you guys think about an upcoming build I'm looking to put together. I will be using it in combination with a 18" Wacom Cintiq Tablet screen and a 24" (1920x1200) lcd monitor. Main uses will be media server (planning on using PLEX), Photoshop and Sketchbook Pro work, and some low level gaming (I have a gaming rig already, my leach of a little brother would be using it to play BF3 with me)

I already have a 30gb SSD (OCZ Vertex Turbo), three 2TB HDD's (Samsung), and 4gbs of RAM (2x2gb) though I am open to getting more RAM as I think it might help alot with the programs I'm using. I also have an old XFX 4890 that could be used if theres nothing better/more appropriate. I think that 4890 could handle the bare minimum of BF3 @ 1080p but correct me if I'm wrong.

So other than those things I'm looking for other components (CPU, Mobo, GPU, Case/PSU) I am leaning towards a mini ITX build as I dont have a ton of space but I'm open to other form factors if there is a good enough reason. I think I want to run the three HDDs in raid 5 (unless there is a better raid I should be using?) I've been looking at some of AMD new CPU's (AM3+ and FM1) but I'm not really sure what the advantage/disadvantage they present vs older AMDs and 1155 intels.

I guess I can simplify the question down to what processor would you guys recommend for a media server / photoshop / low lvl gaming machine. Was looking at AMD A6-3500 and intel i3 2100 but I'm not sure if either of those are the best choice. Thats the price range im shooting for though, roughly $100 to $150
